Well, we are missing something.........the fabulous!!
Here is our "secret recipe".... Enjoy it!!
1 liter (4,25 cups) of Everclear alcohol
6 medium to large lemons
1,5 liters of water (6 1/3 cups)
500 gr. of sugar (6 1/2 cups)
In the italian tradition, lemon should be organic!!
Wash the lemons with brusher and hot water to remove dust and wax; pat the lemons dry. Using a potato peeler, take all the lemon rinds off of the lemons so there is no white pith on the peel. Place the rind-peelings in a large glass container and cover up the Everclear alcohol. At the fifth day, boil the water and add the sugar. Let it simmer for about 5 minutes (sugar should be completely melt). Let it cool to room temperature. Strain the peels from alcohol and Add the simple syrup to alcohol.
Makes about 2 1/2 liters.
Limoncello is drinkable rightaway. It’s better to serve chilly with frozen glasses.
NOTE: The same recipe works with orange and mandarin.
